The General Manager oversees the day-to-day operations of the Milk Bar Bakery in the Cosmopolitan. They are responsible for leading, managing, and developing all bakery team members to exceed business goals. Additionally, they are accountable for all fiscal operations and performance. The General Manager serves as an on-site point of contact for all Cosmopolitan groups, fostering collaboration and maintaining a positive relationship with the Cosmopolitan team. They must adhere to all Cosmopolitan standards, attend meetings, and work cross-functionally to advocate for Milk Bar.
JOB RESPONSIBILITIES
Operations & Sales
-
Responsible for the financial performance of the Retail Operations lines on our P&L including Revenue, Labor, Waste and COGS. Have full awareness and a proactive approach of managing actuals vs target. Attend P&L meetings with the Cosmo team to review monthly performance

Ensure effective inventory management processes in place from the commissary kitchens, warehouses and vendors

Develop strong cross-functional partnerships with supply chain, food safety, marketing / creative and finance that ensures adequate support is provided to the bakery to improve performance and remove barriers to allow for team members to focus on the customer, people, and results.

Effectively integrate new operating programs with core work methods, tools, and training

Comply and enforce DOH regulations and Milk Bar GMP standards when performing cleaning tasks, preparing food and beverages, and working behind the counter.

Review and ensure completion of daily checklists, including but not limited to: temperature logs, FIFO, soft serve, deep clean tasks and AM / PM checklists.

Follow up on voids, discounts, cash discrepancies and any financial inconsistencies.

Oversee all menu changes and ensure they are properly implemented. Communicate all menu changes to delivery and pickup services.

Address any facilities, tech and art requests with corresponding departments.

Meet direct supervisor on a weekly basis, with a prepared agenda, and attend periodic Bakery meetings.
Human Resources and Talent Development

Drive continuous performance improvement when it comes to team development, accountability, culture and, ultimately, financial performance

Identify, recruit and develop high-quality talent for bakery hourly staff.

Lead staff development and succession planning. Provide ongoing feedback, establish performance expectations and ensure the right people are in the right place at the right time.

Conduct performance reviews as well as progressive disciplinary action for hourly staff.

Complete payroll and scheduling. Anticipate schedule changes based on bakery needs and seasonality, and ensure all staffing needs are met while meeting and exceeding the budget.

Solve for attendance issues, call outs, lateness, and other business disruptions.

Manage team environment and provide timely response to team needs.

Maintain 100% compliance with all relevant policies, EEO, labor, HR, wage and food safety laws and regulations.

Maintain compliance with all Cosmopolitan regulations.
Customer Service

Demonstrate a commitment to service by prioritizing the guest experience and creating personalized moments.

Ensure smooth day to day operations of designated locations. Foster and promote a strong work culture and #MilkBarLife, and uphold brand Steps of Service

Coach, guide and support team to provide exceptional customer experience.

Maintain brand identity in all interactions. Address and resolve all customer issues at the Bakery, on Social Media and through the Customer Experience department.

Fully understand and exhibit the Milk Bar ethos, embody our core values, inspire celebration, and create real magic. Serve as a brand ambassador both internally and externally

Monitor, measure, respond and correct any incorrect customer interactions with designated locations.

SKILLS & REQUIREMENTS

3 years managerial / supervisory experience required, preferably in the hospitality or food industry.

Certified Food Safety Manager Card required. TIPS certification from NV preferred.

Strong leadership, decision making and multitasking skills.
-
Able to work a flexible schedule of nights, weekends, and holidays.

Self starter. Able to observe what needs to be changed and execute it.

Strong communication skills. Ability to solve problems independently and delegate as needed.

Passion for food, sweets and coffee - big plus.

Ability to build relationships and embrace change.

Must be able to safely lift up to 25 lbs and remain in a stationary position for shifts.

Regular, in-person attendance is an essential function of this position.
